03 Sep 2012 Chicken Taco’s with a twist

Tired of the weekly taco recipe? Want to try something new, fun and easy? We love Chipotle and decided to give the usual chicken taco a makeover!

Ingredients

1 lb Chicken Breast
1 packet of McCormick taco seasoning
Garlic salt

Cook 10 min and add seasoning.

Cilantro & Lime Rice

3 cups of Long Grain or Jasmine rice
1/3 cup butter
1 fresh lime- juiced
1/4 cup Cilantro
1 tsp salt- add more to taste if needed
5 1/2-6 cups water

Melt butter in saucepan. Add rice and cook on med-high heat until rice is somewhat translucent 5 min. Add lime juice, water and salt. Bring to a boil and cover. Boil for 5 min. Turn to low and simmer for 15 minutes. When done add fresh cilantro and salt to taste. Tip: For less sticky rice add a few Tbp less water and more butter when cooked.

Cheese Grated
Tortillas warmed
Sour Cream
Salsa

27 Apr 2012 Delicious and Easy Turkey Burger Recipe

I love this turkey burger recipe!  I modified this easy recipe from the Body for Life Recipe book.  There is not much prep time to this healthy recipe and they cook fast since you cook them on the George Forman Grill.  This easy recipe can be cooked on the stove or in the oven, but I would not recommend grilling it on a gas grill since ground turkey crumbles easily and there is no added bread or breadcrumbs to hold it together.  I like to eat these on a Oroweat Sandwich Thin.  Even my kids gobble these up!

Is there a big dinner coming up? Want to impress your friends and company? Then I have the perfect recipe. Now, no one said it would be easy…. but it will be worth it! This Chicken Marsala Recipe is the perfect main dish! This includes perfectly basted and grilled chicken breasts, fresh mushrooms and prosciutto accompanied by a rich Marsala sauce. I have found that garlic mashed potatoes and green beans with romano crumbs are the perfect companions to this dish. For this Chicken recipe the trick is using fresh ingredients, follow the recipe precisely and create both the grill baste and Grill seasoning! Of course you can enjoy this dish with a delish app like salami and mozzarella or tomato basil mozzarella, and a nice bottle of wine.

Prepare ahead of time:

Grill Baste:
In bowl mix: 1/2 olive oil,1/4 cup red wine vinegar, 2 Tbs lemon juice, 1Tbs Dijon Mustard, 1 1/2 Tbs Sugar and fresh Parsley.
On stove cook: 2 Tbs Butter, 1 finely chopped yellow onion, 4 minced garlic cloves- Cook until onion is translucent.
Add: 2 Tbs flour then whisk in wet ingredients from bowl. Cook until thickened. Refrigerate or leave at room temp until time to use. Brush on grill and Chicken before Grilling

Grill Seasoning:
1/4C salt, 2Tbs black pepper,1 1/2 tsp granulated garlic, 1 1/2 tsp granulated onion, 1 1/2 tsp oregano,1/4 tsp crushed red pepper. Mix. Keep is cool dry place and use on any grilled meats.

Delicious Toasted Pecan Pie Recipe

 We made this delicious Pecan Pie Recipe from Martha Stewart that is to die for!  The presentation of the pecans on the pie will have everyone impressed with your kitchen skills.  The toasted pecans in this pie adds a delicious flavor (I don’t think I will ever make a pecan pie without toasted pecans again!).   The recipe is fairly simple and decorating the top doesn’t take as long as you expect.  This pecan pie recipe uses corn syrup to add sweetness to this pie.  I used the pampered chef chopper to chop the pecans used inside the pie, so that made things quicker.  This pecan pie recipe calls for a 9″ cake pan instead of a pie plate, so make sure you have enough pie crust!  Here is the recipe for the pie dough that we used for this pecan pie.  We hope you enjoy this pie as much as we do!

Here is the Pampered Chef Little Ice Cream Dipper!  We love this Ice cream scoop!  The unique thing about it is that it has a liquid core that helps to keep the scoop warm while you are holding it.  Helping you to scoop your ice cream!  It is also a very hardy scoop that will not bend.  This scoop creates the perfect Ice cream scoops!

This is our journey to creating the perfect pasta sauce.  This may not seem like a big deal to many… I know, open the jar and dump it over pasta.  But, we want more!  More fresh ingrediants.  More flavor(not artificial).  Less preservatives!  More spices and heartyness.  No really… we just plain want to be able to say we can make it.  Coming up on on Vlog series Leann and I will be making 2 different versions of a homemade pasta sauce.  We will explore the different recipies and versions of pasta sauce and find the perfect version.

One way we have researched recipies is by using youtube.  There are a lot of different ideas and ways to cook pasta sauce out there and a lot of demonstrations!  Which we need!  Since neither one of us has made pasta sauce from scratch before we are both excited and reluctant.  We both love pasta and know that the homemade versions should taste better… so hopefully they do!  I saw some versions include a stop top method, and some by crockpot.  Some add seafood and others ground beef.  some people prefer cann tomatoes to fresh ones.  and some use canned spices as opposed to fresh ones!

 

Fun Fact!  Red pasta sauce in Milan, Italy is more like olive oil with minced tomato pieces in it!

Here is our demonstration of the Pampered Chef Egg Separator.  This is one kitchen gadget that we use and we love.  The great thing about this is that it makes seperating eggs so easy!  It is very afforadable, dishwasher safe and can be used to wisk the eggs right up.  This gadget is very useful in the kitchen.  It’s great to ensure that you dont get egg shells in your egg whites.  Egg whites alone offer a lot of protein and no fat.   Plus, when baking the perfect meringue pie alot of egg whites are required.

 


07 Dec 2011 Pampered Chef Ultimate Mandoline Kitchen Gadget Review

We reviewed one of our favorite kitchen gadgets – Pampered Chef’s Ultimate Mandoline. We had a great time filming this review and we love this mandoline. The biggest plus to buying the Pampered Chef Ultimate Mandoline is the built in safety guards and the biggest downside is that there is only a small opening, the size of a medium potato to slice. If you are looking to slice something big, you will have to cut it into smaller pieces to fit it into the hole. This is the time of the year when we are looking at our families Christmas Traditions. It is the time when some of us are going to make sure we keep the Christmas tradions of the past or start new one’s. This time of year is one that draw people together. With memories of our youth, family, loved ones that are no longer with with us and new one’s that are.  I feel bad that some traditions are carried out with more of a check list or things to do type of attitude.  Recently I took my family to go and see a Christmas light show.  This the same light show that I have seen almost every year since I was a child.  We got all bundled up, drove to the light show, walked around, saw the same  lights that I saw as a child.  It took about 25 minutes and then we were back in the car.  And, it felt good… because I could cross it off my list of things to do for the holiday season.  On the drive home it made me feel a little disappointed that I had viewed a fun holiday tradition as just another thing on my to do list.

So, now I decided we wont do the exact same things every year.  This year I want to mix it up!  I determined instead of seeing the same  zoo lights show we will take the kids on a fun train ride to the Polar Express.  And, along with the same cut out and frosted sugar cookies we will try some Apfel Streudal.  Not, that I’ve made Strudeal before but that its a fun tradional holiday treat and part of the holiday spirit it to enjoy things that are tradional not just for you and yours.  But, I have to admit the fruit cake may still be a thing I’m not quite ready to try this year!

No matter what traditons you may try this year.  No matter what weather and shopping the season brings you.  I hope that you and your loved ones remember this holiday.  Because this time, this holiday it will never come back but, you can always try and make it special and remembered.
